Wedge Oak Farm is happy to host Chef Toby Rodriguez & the Lache Pas Boucherie family as they bring a traditional Cajun Boucherie to the Nashville area May 22-23, 2016. For ticket information please click here.
A Boucherie is a community coming together to harvest an animal. Some of Nashville's finest chefs will be present to assist with the killing, slaughter, butchering and processing. Lache Pas will teach the techniques and philosophy behind the art of boudin and boudin noir, gratons, fraisseurs, saucisse de voile, backbone fricasse, head cheese, tasso, chaudin, ponce and saucisse de graisse. These traditional delicacies are made with the intent of preservation, and with the understanding that not a single aspect of the animal would be wasted.

On the second day there is a celebration including a 6 Course Dinner featuring all of the dishes that were procured during the process complemented with locally sourced goods. Each course of the Boucherie Dinner will be paired with local libations at an outdoor Chef's Table here on Wedge Oak Farm.
If you think a Boucherie is for you, come learn, celebrate and eat some great food!
